Ingredients:

 

1 c. diced cooked chicken breast
1 med. red apple, cored and diced
¼ c. fat-free mayonnaise
¼ c. finely diced green pepper
¼ c. fat-free shredded mild cheddar cheese
Dash of salt
Couple dashes of lemon-pepper seasoning
Lettuce leaves

Directions:

 

In a small bowl, combine diced cooked chicken breast, diced apple, fat-free mayonnaise, finely diced green pepper, fat-free mild cheddar cheese, salt and lemon-pepper seasoning; toss.


Cover and refrigerate until ready to serve.

 

Serve on a lettuce leaves. Makes 1 large salad or 2 small ones!
